Harvested under the stars in the Tulbagh valley to maintain fruit purity, the juice undergoes secondary fermentation in the bottle and is aged on its lees in cool, underground cellars. The result is a wine that balances the “viva” (liveliness) of the bubbles with a sophisticated, creamy texture.
