Fable Mountain Vineyards is situated in one of the coldest pockets of the Western Cape, where ancient shale soils and extreme temperature shifts allow for slow, concentrated ripening. The Raptor Post 2019 is crafted with a “hands-on, heart-in” philosophy: all grapes are hand-harvested and fermented naturally in small tanks using gravity-fed systems. This gentle approach ensures that the wine retains its delicate floral aromatics and silky tannin structure.

The 2019 vintage is characterized by its freshness and “brambly” energy:
Appearance: A bright ruby red with youthful purple hues.
Aroma: An expressive nose featuring wild strawberries, crushed black pepper, and subtle notes of fynbos (South African scrubland) and violets.
Palate: The Syrah (the dominant component) provides a savory core of plum and olive tapenade, while Grenache adds a layer of bright red cherry sweetness. Mourvèdre anchors the blend with a touch of leather and spice.
Finish: Exceptionally clean with a chalky minerality and a persistent, spicy finish.
