Darling Cellars is situated in a region heavily influenced by the cold Atlantic Ocean. This allows the Merlot grapes used in this rosé to ripen slowly, retaining the high natural acidity needed to create a wine that is crisp and “zippy.” By using the “Saignée” method or short skin contact, the winemakers achieve a delicate salmon-pink color and a flavor profile that is distinctively Merlot.
